I always had a problem with pancakes: no matter the recipe, they were too thin. I like thick, fluffy pancakes; every recipe I tried fell short. This recipe is truly a hodge-podge of many, tweaked to “just right.” Enjoy!
Ingredients:
2 c. whole wheat flour
2 eggs
2 Tbsp. sugar (I like using brown sugar)
3 Tbsp. oil
1 3/4 c. milk or cream
3/4 Tbsp. baking powder
Directions:
Literally, just mix the dry first ingredients and then the wet (don’t mix too hard…pancake batter should be lumpy). Heat up your griddle (a fav wedding present) and pour on 1/4 cup dollops. Flip when they get “holey.” Makes ~ a dozen.
